Context
Finca El Refugio sits at 1,960 meters in the high terrain of La Plata, Huila, where David Rubén Gomez has been producing coffee for more than two decades. Coming from a family deeply rooted in coffee farming, David now manages four hectares planted with Gesha, Caturra, and Variedad Colombia, with plans to expand his nursery into additional exotic varieties.

David is part of the Martír group, a community of around 20 families farming between Alto Cañada in Huila and Itaibe in Cauca. These producers work some of the region’s steepest and most remote landscapes where altitude, cooler temperatures, and varied microclimates create ideal conditions for high quality Gesha.

The precision in David’s processing is a hallmark of his work. Cherries rest for 24 hours before being depulped and undergoing a 36-hour fermentation. After washing, the parchment dries slowly over 22 days, allowing sweetness and structure to develop while preserving clarity. This approach results in a cup that balances Gesha’s classic florals with deeper fruit tones and a round, honeyed texture.
