Context
Santa Monica is a family run farm in Colombia led by Jairo Arcila, a producer known for his careful, experimental approach to processing. Set at a moderate altitude with good airflow and stable temperatures, the farm is well suited to steady fruit development and controlled post-harvest work. Jairo builds on generations of experience, pairing it with a more technical approach to get the best out of each lot while keeping things consistent year to year.

This lot was sourced through POMA, a research-driven importer working closely with producers on cultivation and processing. For this Chiroso, the focus is on fermentation,  specifically the EF2 (Extended Fermentation, Stage Two) approach, used to shape aroma and overall cup profile while balancing tropical intensity with the natural character of the variety. It’s a method that builds complexity through fermentation without losing that underlying profile.

PROCESSING

Cherries are carefully sorted before undergoing a 24-hour aerobic fermentation, followed by 50 hours of anaerobic fermentation in sealed GrainPro bags at controlled temperatures. The coffee is then dried slowly on raised beds for around 18 days. This EF2-style process is designed to build intensity and structure while keeping the cup clean and well defined.
